  • Chardonnay
    Tasting Notes:

    Aromas of peach and apricot with notes of bosc pear and apple and a hint of toasted oak. Strong flavors of green apples, tropical fruits and marzipan. Extended lees aging adds a rich mouthfeel but the acid carries the day.

    Adam aged this wine Sur leis for 14 months with batonnage once a month for 11 months. 85% of the wine went through Malolactic fermentation.

  • Pinot Noir
    Tasting Notes:

    Find beautiful aromatics of cherry with a hint of sexy toasted oak. The flavors are lush and sweet with notes of black cherry, pomegranate, and strawberry.  The acidity is well balanced and helps preserve the sensation of velvet well into the finish.

    Winemaking:

    2017 provided ideal growing conditions for this early ripening varietal. Fairly good heat was followed by a cool snap during the later part of the growing season.

  • Cabernet
    Tasting Notes:

    Aromas of dark riparian fruit like blackberry are infused with the faintest hint of minerality and cedar. Gobs of raspberry, plum, and black cherry flavors are fully supported with a generous thread of acidity. Tannins are pronounced but pleasingly supple.

    Winemaking:

    This Cabernet Sauvignon has a small amount of Merlot and Petit Verdot added to the blend for extra layers and complexity. This wine was matured for 12 months in new and neutral oak barrels.

  • Merlot
    Tasting Notes:

    Find bittersweet chocolate-covered cherry on the nose with the slightest hint of dried herbs. The palate is very structured with plum and Emperor cherry flavors suspended on a delicate acid platform. Good tannin structure shows up towards the back of the palate. It’s an awfully serious wine, especially for the price.

    The stars aligned in 2017 allowing Adam to source some incredible Merlot from the famed Margarita Vineyard in Paso Robles. Cooler than much of the region, the resulting wine is deep, and pleasingly structured.

  • Petite Sirah
    Tasting Notes:

    Boysenberry and blueberry aromas are bursting from the glass —they are mixed with some pretty spice from the American oak. This is a flavor bomb of blue fruit! It’s like baked blueberry pie is mixed with roasted blue plum and then coated with dark chocolate. The tannin structure provides a nice balance for all of this fruit. Adam call this wine his “blueberry motor oil.”

    Adam was able to pull together a collection of East side Paso Robles vineyards for the expressive fruit-driven component and Lodi for massive, over-the-top structure and depth. Nice combination.
